One land, Euskal Herria, some shepherds and their flock. With these ingredients we obtain a very special milk with which we elaborate the Dorrea cheese. A natural cheese, with a strong personality and traditionally made in the Basaburua Valley, in the Basque mountains.


Our country

Euskal Herria has always been a land of shepherds. The Cantabrian Sea heats this mountainous, humid and green gulf. Here subsistence farming of small farms has developed a local sheep, rustic and indomitable. Like its climate and its people.

The local breeds: latxa and carranzana.
The special milk they produce.

Latxa (from “latza”, rough in Basque, due to its hard hair). They are the two native sheep breeds of the region. They have been raised in Navarra, Bizkaia, Araba and Gipuzkoa for a long time and have adapted perfectly to their land and climate. They are not apt to be kept in the stable. Its rustic caracater accompanies the technique of extensive grazing that will later deliver that flavor of high sierra grass to the milk.

We are committed to our land, our traditions and our culture. In the Basque Country the shepherds painte the green hills with white sheeps. Proud we take the responsibility to keep the flame alive. With love we tend our flocks and collect their milk. Our native sheep graze extensively on the slopes of these mountains.

Every morning we collect the raw milk in the mountain huts and farms of our shepherds.

In Dorrea we collect raw milk every morning in the farms and huts of more than 170 shepherds from the Basque Country. We are many who put our work so that the chain is not broken. It is a task that needs dedication and perseverance.

Handcrafted elaboration, traditional method. It's our commitment.

From this raw milk that we collect every day we make the cheese in the same way that it has been made since the Neolithic. It is the same cheese, from the same milk, we are the same women and the same men. It is the same land.

The cheese factory

Our cheese factory was founded 40 years ago in the Basaburua Valley, under the Aralar Mountains, in the heart of Idiazabal región. We make cheeses with and without Idiazabal Denomination of Origin, in addition to our cottage cheese. Our philosophy: to elaborate natural and quality cheeses conserving the traditional flavor and techniques.

Cheese made with milk from certified sheep flocks of Latxa breed, bred extensively in Navarra and the Basque Country. Enzymatic coagulation, not pasteurized. Pressed paste and long aging. Smooth, ivory-colored bark. Characteristic and intense flavor, pleasant aroma and slightly spicy. Fatty.

COW'S AND SHEEP'S RAW MILK CHEESE FROM NAVARRE AND BASQUE COUNTRY

Cheese made with a mixture of raw cow milk (80%) and sheep (20%) from Navarra and the Basque Country. Enzymatic coagulation, not pasteurized. Pressed paste and average 4 month aging. Smooth bark, ivory color and usually smoked. Characteristic creamy and smooth flavor. Fatty.

Cottage cheese

COTTAGE CHEESE MADE FROM RAW MILK CHEESE WHEY

Cottage cheese mady throughout the year with the extraordinary whey of the elaboration of our raw sheep milk cheese from the Basque Country and Navarra. It can be consumed by itself or both in sweet or salty recipes. Cottage cheese is not a cheese, but a dairy derivative. It contains proteins of very easy assimilation and of high biological value, phosphorus, sodium, calcium and niacin. It contains four times more proteins than milk, and is easier to assimilate than those found in other dairy products (casein). It contains much less fat than cheeses.

We can select our cheeses in three types: the Idiazabal cheese, the sheep cheese and the sheep and cow mixed cheese. In each of these types we have natural and smoked cheese, and they are available in different formats. In addition, with the whey of our cheese we elaborate the fresh and healthy cottage cheese from sheep.
